This Ethiopian coffee release marks our anticipation of new crops travelling to North American ports this summer. Harvest season for African coffees generally happens from October to February, so definitely expect to see more coffees from this region in our coffee lineup this summer. They are an excellent option to have as a filter brew to enjoy the aroma and flavours. They have a complex aroma and floral notes from forest fruit.

Situated in the Gedeo zone's Gedeb district, Worka Danche is renowned as one of the finest coffee-producing regions within the famous Gedeb Woreda. The area is characterized by dense, layered semi-forest vegetation, including banana and shade-grown coffee trees, making Danche an excellent example of top-tier coffee-growing agroecology. In 2019, SNAP Specialty Coffee established a new wet mill in the tiny hamlet of Chelbesa within Danche Village, aiming to purchase red cherries from local farmers exclusively. This goal became a reality upon the project's completion. The wet mill's ceramic fermentation tanks enhance the clarity of the processed coffee and expedite fermentation by retaining heat.

About Dega and Wolisho

Dega and Wolisho are two coffee varieties originating from Ethiopia, known for their distinctive flavours and high-quality beans. These varieties are grown in regions that provide optimal conditions for coffee cultivation, including high elevations, rich soils, and suitable climate conditions. Both varieties are often found in the Gedeo zone of the Gedeb district, a renowned coffee-producing area.

SNAP Specialty Coffee, recognizing the potential of the Danche Village, built a new wet mill in 2019 in a small hamlet called Chelbesa within the Danche Village. They aimed to source exclusively red cherries from nearby farmers, ensuring high-quality inputs for their processing operations. The wet mill features fermentation tanks made of ceramic, which offer several advantages:

- The Clarity in Coffee: The ceramic material helps maintain a clean fermentation environment, producing more apparent flavours in the processed coffee.
- Enhanced Fermentation: Ceramic tanks retain heat, speeding up the fermentation process and contributing to the development of desirable flavours.

The ambition of SNAP Specialty Coffee to create a high-quality processing facility has paid off, as they are now able to produce some of the finest coffees in the region, showcasing the unique characteristics of varieties like Dega and Wolisho.
