Located in La Union, 90km from Pasto, Finca La Indonesia is a testament to the transformative efforts of dedicated farmers like Frank. Once plagued by illicit trade and violence, this area has evolved into a resilient community focused on cultivating specialty coffee. The Torres family has owned this farm for over 40 years, renowned for its exceptional coffee production. Frank, now overseeing operations, is passionate about coffee, having inherited part of the farm. His journey began with Starbucks' specialty coffee program and expanded into green coffee buying for exporters and importers. This diverse experience has enabled Frank to pioneer innovative processing methods, making his farm one of Colombia's most unique and forward-thinking. Frank's commitment to sustainable practices is evident in his efforts to transition 90% of the farm to organic, preserving soil health and protecting crops from pests. Apex coffee importers are delighted to feature more of Frank's coffees in their program this year, as his dedication to advancing post-harvest techniques shines through in the exceptional complexity and sweetness of this season's harvest.

About Maracaturra

Maracaturra is a hybrid coffee variety resulting from the cross between Maragogipe and Caturra plants. It features large beans and offers a complex flavor profile with fruity and floral notes, balanced acidity, and a full body. Maracaturra is cultivated in regions suitable for Arabica coffee production and is appreciated for its unique characteristics in the specialty coffee market. While not as widely grown as some varieties, it is prized for its quality and distinctiveness among coffee enthusiasts.

Frank’s Processing - Honey

Frank starts by evaluating the ripeness of the coffee cherries and conducting a brix reading on the sugar levels. For his honey coffees, he aims for a Brix reading of 22. After cherry selection, he begins an anaerobic fermentation process which lasts between 48 to 55 hours in plastic tanks.

Pressure in these tanks is released every 5-6 hours. Temperature is also
monitored throughout to ensure it stays within an ideal range. After this stage, the cherries are depulped and placed back in open tanks for another period of fermentation for 72 hours.

The coffees are then moved to sun beds to dry for 20-25 days depending on the weather conditions.

"I enjoy experimenting with processing and finding exotic and perfectly layered flavors in coffee, but I have learned over the years that the successful experiment is the one that you can repeat which means to understand each step and make it efficient. The rest is a matter
of taste preferences. Indeed, there is nothing like a perfectly balanced, bright and sweet coffee that stands out for unique flavors brought by a complexity of the terroir and genetics of the variety with a bit of care and knowledge into the processing."

Finca La Indonesia, located in La Union, Nariño, Colombia, is renowned for its exceptional coffee production. This region benefits from high altitudes, nutrient-rich volcanic soils, and a climate ideal for cultivating specialty coffee. The coffee cherries grown here undergo precise processing methods, including extended fermentation and meticulous drying techniques, to enhance the flavors and quality of the beans.

Nariño, in southwestern Colombia, is celebrated for producing some of the finest coffees in the country due to its unique microclimate and elevation. Coffees from Finca La Indonesia are often characterized by vibrant acidity, distinct floral and fruity notes, and pronounced sweetness, reflecting the terroir and careful attention to detail in cultivation and processing. This region's coffee is highly sought after by enthusiasts and specialty coffee roasters worldwide for its exceptional quality and complex flavor profiles.
