Description

A new addition to our ALMA program arrives from producers Marcelo Nogueira Assis and Flavio Marcio Silva, founders of Fazenda Bioma Café in 2011. Located in Campos Altos, Alto Paranaíba, within Brazil’s renowned Cerrado Mineiro region of Minas Gerais, Bioma Café represents a thoughtful and long-term approach to specialty coffee production.

Brazilian coffees express distinct regional identities, and Minas Gerais is no exception. While it is Brazil’s largest coffee-producing state, regions within it produce remarkably different cup profiles. Cerrado Mineiro, located in the west and northwest of Minas Gerais, is known for its elevated plateaus around 1,200 meters above sea level, dry winters, and highly organized coffee cultivation. These conditions support slow, even cherry maturation and contribute to coffees with structure, sweetness, and clarity.

This lot is processed using the pulped natural method,  where the skin is removed before drying while preserving part of the fruit mucilage. The result is a cup that balances cleanliness and sweetness, often expressing notes of caramel, nuts, and a refined roundness characteristic of the region.

What makes this coffee especially meaningful is the philosophy behind Bioma Café. Marcelo and Flavio built the project with a long-term vision centered on agronomic precision, sustainability, and consistency across harvests. Every stage, from cultivation to post-harvest processing, is guided by technical knowledge and continuous refinement.

By maintaining full control over production, Bioma Café creates coffees that reflect both the natural strengths of Cerrado Mineiro and the deliberate work of producers committed to quality, transparency, and lasting excellence.
