Excited to release our first Guatemalan coffee since our launch two years ago. We are dialling in our cupping process more and more; we have a bigger demand now, and so this enables us to increase our production and expand our coffee portfolio. One of the things that we always look for in coffee is a well-balanced, complex cup, meaning the acidity level has to be expressive, stand out, and we look for catching many different notes in the cup during cupping.
This coffee from Alex Herrera, from Finca Pampojila in San Lucas Toliman, was one of the taste-catching coffees at the cupping table. This is super exciting because we will most likely bring more coffee from Guatemala. This one in particular has an outstanding brightness in its acidity, an elegant Ferrero Rocher vibe. This coffee can go very well as a filter and espresso. One way to describe this coffee is as outstanding.
About Finca Pampojila.
Finca Pampojilá is a historic farm in Guatemala that was founded in the 1850s by Manuel and Monica Diaz. This farm has won many national awards throughout its history. In 2010, the farm was damaged by tropical storm Agatha and was sold from the Diaz family to the organization Agropecuaria Atitlán. This event provided an opportunity for rejuvenation of the farm, including planting new varieties and building infrastructure to support new innovative processing techniques. The farm is thriving now. Finca Pampojilpa is a member of the Association of Private Natural Reserves of Guatemala. 50% of the farm area is committed to remaining in its natural state as a tropical forest.
About Alex Herrera.
Alex Herrera is the owner of both Finca Pampojila and Finca Panamá, located around the Atitlán Volcano in the Sololá region, within Guatemala’s Santa Bárbara municipality.
About the region. Atlitan.
Atitlan is a geographically diverse area, contributing to the citrus acidity and deep chocolate flavours of the coffees produced in this region. 90% of the coffee in this area is grown in its surrounding volcanic slopes. Winds blow across the calm waters, the rain is plentiful, and the soil is rich, all contributing factors to the varying microclimates and cup profiles from this area.
