Description
It’s Ethiopian season, friends! Who doesn’t love a beautiful Ethiopian coffee?
We’re excited to welcome a new harvest from Edido Kebele, located in the district of Yirgacheffe within the Gedeo Zone, Ethiopia.
As you may already know, many Ethiopian coffees are produced through cooperatives and networks of smallholder farmers. For this particular lot, farmers across the mountainous terrain of Edido Kebele carefully harvest ripe coffee cherries and deliver them to the Edido Kebele washing station for processing.
This coffee undergoes the washed process, where the outer cherry skin and mucilage are removed before the coffee is carefully dried on traditional raised African beds. This method helps preserve clarity, structure, and showcase the unique characteristics of the origin.
During our cupping sessions across multiple Ethiopian selections, this coffee stood out immediately for its sweetness, vibrant aromatics, fragrance, body, and silky texture, creating a complete and deeply enjoyable cup experience.
We’ll be intentionally roasting this coffee on the lighter to medium side to preserve and highlight its natural sweetness, floral complexity, and expressive character.
