Story
Sookoo Coffee’s founder, Ture Waji, and his brother, Assefa, established the company in early 2019. Currently, the brothers exclusively produce naturally processed coffees using cherries sourced from the surrounding kebeles. Each lot is named after the kebele it originates from, such as Shoondhisa or Bookkisa.
About Gibirina 74110 and Serto 74112
Gibirina 74110 and Serto 74112 varieties originate from the Metu Bishari selections made by the Jimma Agricultural Research Center (JARC) in the Illubabor Zone in 1974. They were chosen for their resistance to Coffee Berry Disease and are now among the most widely propagated varieties in Ethiopia.
About the natural process in the region
The cherries are dried at a centralized location on raised beds at an elevation of 2173 masl for 15-20 days in thin layers. They are frequently moved and rotated to ensure even and precise drying, which results in some of the most vibrant and exceptionally clean coffees. Unlike many naturals, they exhibit high floral notes and acidity
Sookoo Coffee purchases organic cherries from approximately 100 smallholder farmers, separated by their sub-kebele upon delivery. In Ethiopia, most farmers are small landholders who often harvest coffee in their gardens alongside crops for personal consumption. This is in contrast to their South American counterparts, who typically own many hectares with thousands of coffee trees.
