15 grams of coffee / 250 grams of water

ideal brew time: 2 min 30 sec - 3 min

water temperature: 205 degrees ferenheit

for espresso:

17g in / 34g yield 1:2 ratio

Description

Alright friends, you asked for it, we bring it to you. Las year we featured another coffee from Jairo Arcila and it was a complete success. It has opened the door to many new relationships and partnerships. Given it success we've decided to release Jairo Arcila back to our lineup.  We do expect this coffee to be a complete sell out so don't miss out while you still have a chance! 

This coffee was grown by Jairo Arcila at one of his farms Santa Mónica. This coffee underwent a washed process to a 48 hour anaerobic fermentation with wine yeast plus peaches , then after placed to dry on raised beds for 10 days. 

This is a limited edition of Jairo Arcila we are happy to feature on our special summer menu. Expect to find notes of ripe peaches, toffee, caramel and cacao nibs with hints of mandarin.

This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
