Description

We’ve been craving a straightforward washed coffee for a while now — something clean, vibrant, and expressive. Recently, we cupped a few coffees from our Canadian friends at Apex Coffee Imports, and one stood out. At the cupping table with Diego Vergara's coffee, we were also joined by Paola Trujillo coffee, whose coffees we’ve tasted in the past and who never fails to impress. We previously featured a washed SL28 from Kenya sourced by our local friends at Itso Coffee — and this new lot brought back that same excitement.

The fragrance of this coffee is reminiscent of spicy jasmine, while the aroma when brewed carries soft caramel notes with a winey character. In the cup, we get a refined jasmine profile paired with grape-like winey acidity — exactly what you'd hope for in a classic SL28. As it cools, the cup opens up into a juicy, fruit-forward sweetness, finishing with elegance and clarity.

Paola Trujillo is a passionate producer who, together with her family, owns Patio Bonito Farm. Her mother, Maria Angela, taught her the value of sharing knowledge, while her father, Carlos, gave her the opportunity to get involved in his own coffee project. After studying chemical engineering, Paola chose to join the family business and contribute to coffee cultivation. Paola has become highly skilled in all stages of the pre- and post-harvest processes, with a strong focus on improving coffee quality and processing. The entire family plays an active role in this venture, helping to build a well-respected family project in the region. The family philosophy is “The best legacy we can leave our children is: love, knowledge and a planet to live on”.
